Vegan Satay Noodles 🍜

20 min dinner yes pleaseee

INGREDIENTS (serves 4)
πŸ“Œ2 peppers (i used red & orange)
πŸ“Œ1 courgette
πŸ“Œ2 cups edamame beans
πŸ“Œ1 red onion
πŸ“Œ~250g rice noodles
πŸ“Œhandful of mixed nuts

For the sauce:
πŸ“Œ200g peanut butter
πŸ“Œ6tbsps dark soy sauce
πŸ“Œ4 tbsps maple syrup
πŸ“Œjuice of 1 lime
πŸ“Œsplash of hot water
πŸ“Œspices: ginger powder, paprika, onion/garlic powder

METHOD:

-chop up your onion and fry this off in your wok for about 4 mins until soft
-chop up all your other veg and add to the wok
-saute for about 5 mins on high heat
– cook your noodles according to their packaging, a few mins under as you’ll saute them with the veg for a few mins
-add the noodles to the veg mix

-make your sauce by mixing all the ingredients above
-mix in the sauce and saute for a couple mins
-top with some mixed nuts
