For the sauce, mix some plain greek yoghurt in with lots of lemon juice and some grated cucumber. Add a clove of minced garlic ( fresh preferably), and some salt and pepper.
Cut open the pitta in half and put it in the toaster for a couple of minutes.
Assemble it by adding the sauce first, then some spinach, the chicken and some halved cherry tomatoes.
