Turkey breast with a Dijon Mustard Sauce 🥘
This was a tasty one and only took about 20 mins!
Season your turkey breast (can also use chicken breast) with paprika, garlic/onion powder, tarragon and salt/pepper.
Fry it until almost fully cooked and then put on a plate to rest while you make the sauce.
For the sauce youll need to boil some water and mix with chicken stock. Add it to the same pan as you used before as you want to use up all the turkey bits. Scrape them off the bottom and simmer this for about 5 minutes. Add in 2 handfuls of chopped mushrooms and simmer until they cook down. Then add 2 teaspoons of flour to thicken the sauce and mix this in well. Add a teaspoon of dijon mustard and a teaspoon of dried tarragon. Roughly chop up 2 handfuls of spinach and add to the sauce.
Simmer this until the sauce thickens up and then add the turkey breast back in. Simmer for another few minutes so the turkey breast gets infused with all the flavour.
Squeeze on the juice of half a lemon right at the end for a finishing touch.
I served this with some leftover potato gratin and it was the perfect pair!
