Turkey Breast with a Creamy Sundried Tomato Sauce 🀀

This was inspired by jzeats – so creamy and packed with flavour 😊

INGREDIENTS (4 servings)

πŸ“Œ1 can coconut milk
πŸ“Œturkey breast (or protein of choice)
πŸ“Œ3 handfuls of spinach
πŸ“Œspices: smoked paprika, dried basil, parsley

For the sundried tomato paste:
πŸ“Œ1 jar of sundried tomatoes
πŸ“Œ1/4 cup pine nuts
πŸ“Œ1/4 cup parmesan cheese
πŸ“Œ2 tbsps tomato paste
πŸ“Œ3 cloves of garlic
πŸ“Œolive oil

METHOD:
-season your turkey breasts and fry on high heat for a few minutes on each side so you get a crispy outer layer
-remove from the pan and place on a plate while you make your sauce

-to a food processor, add in your ingredients for the sundried tomato paste
-blitz until you get a thick paste consistency
-add half of this mix to the pan and save the rest (will last a few days in the fridge for any other recipes)
-fry this off for a few minutes and then add in the cocunut milk
-let this simmer for about 10 mins and then add back your turkey breasts
-let simmer for another 5 mins and add in your roughly chopped spinach

If you wanted to make this a little quicker, you can also use a sundried tomato pesto for your paste

I served this up with some mashed potatoes but it would work really well as a pasta sauce too!
