Today’s lunch was a Roasted Cauliflower and Refried Beans wrap 🌯
To make the Cauliflower, just chop them up into small bite sized pieces and pop them into a baking tray. Add some olive oil and sprinkle on whatever seasoning you like. I usually go for a mix of paprika, cumin and garlic powder. Roast them for a total of 20 minutes, flipping them at the halfway point.
For the refried beans, I just used a can of precooked black beans. Make sure to drain and wash the beans before cooking. Sauté half a white onion and a clove of garlic before adding the beans to the pan. Heat them up with a bit of water and once it is hot, you can mash them up with a potato masher.
My favourite part is the avocado sauce – just add a mashed avocado and a good 2-3 tablespoons of greek yoghurt. Half a juiced lemon and season with salt and pepper to taste. So easy and so delicious as it adds some acidity to the hearty beans.
Chuck it all together into a wrap and yes, add some grated cheese to it (because why not)
