Sweet Potato Hash Browns with Black Beans ๐Ÿ 

madebyblitz this was unrealllll๐Ÿคค๐Ÿคค I made a few changes as i didnt have some of the vegan specific ingredients but go to his page for the vegan recipe!

INGREDIENTS:
๐Ÿ“Œ1 large sweet potato
๐Ÿ“Œ2 small brown onions
๐Ÿ“Œ3 eggs
๐Ÿ“Œ2 cans black beans
๐Ÿ“Œ2 tbsp tomato puree
๐Ÿ“Œ1 fresh tomato
๐Ÿ“Œ3 handfuls of mushrooms
๐Ÿ“Œ1 vegetable stock
๐Ÿ“Œ4tbsp parmesan
๐Ÿ“Œspices: smoked paprika, cumin, parsley, bay leaf, onion/garlic powder

For the sauce:
๐Ÿ“Œ4 tbsps yoghurt
๐Ÿ“Œjuice of half a lemon
๐Ÿ“Œ1 mashed avocado
๐Ÿ“Œsalt/pepper

METHOD:

-start by peeling and grating your sweet potato and adding it to a large mixing bowl
-next finely chop up your onions. Add one into the mixing bowl and the other into a frying pan
-fry off the onion on the frying pan for about 5 minutes before adding both drained cans of black beans
-add in the tomato paste, chopped fresh tomato and vegetable stock (you may need to add a bit of water to loosen it all up)
-then add your seasonings (paprika, cumin, bay leaf, garlic/onion powder)
– chop up your mushrooms and add to the bean mix too
-simmer this on a low-medium heat whilst you make your hashbrowns

Back to your mixing bowl…
-add in the grated parmesan, seasonings and eggs to the sweet potato and onion mix
-salt and pepper and a dash of olive oil
-fry them off in batches

Serve up with the yoghurt and avocado sauce and enjoy!!
