Roasted Pepper and Tomato Paccheri🍅🌶
What an absolute winner this is 😍😍
Start off by chopping:
2 peppers (ideally red and orange)
A medium brown onion
5 whole cloves of garlic (skin on)
Add this to a baking tray and season with some olive oil, smoked paprika, onion powder, basil and parsley.
Roast in the oven for about 20 minutes.
Once it finishes roasting, add it all to a blender (make sure you peel the garlic before adding). Fill the roasting tin up with some water to get the seasoning up and add to the blender too. Keep adding water until you reach your desired consistency.
Add this to a sauce pan and let simmer for about 10 minutes.
Whilst its simmering, chop up a few handfuls of mushrooms and add to the sauce.
Mix in a couple of teaspoons of mascarpone cheese (or cream if you have it).
When you’re a couple of minutes from finishing, roughly chop up some spinach and fresh parsley and add to the sauce.
When your pasta is a couple of minutes from finishing, drain and mix in with the sauce. Make sure to let this cook for a few minutes so the sauce and pasta really combine.
Finally squeeze the juice of a lemon and some parmesan over the pasta.
Serve up with some extra parmesan and enjoy!!!
