Roasted Harissa Aubergine & Red Pepper Rice ๐Ÿ†

Oooh what a vegan beauty๐Ÿ˜

INGREDIENTS:
๐Ÿ“Œ1 large aubergine
๐Ÿ“Œ1 red bell pepper
๐Ÿ“Œhandful cherry tomatoes
๐Ÿ“Œ200g basmati rice
๐Ÿ“Œ1 brown onion
๐Ÿ“Œspices: harissa mix, smoked paprika, maple syrup, garlic/onion powder

METHOD:
-start off by chopping the red bell pepper and cherry tomatoes into small pieces.
-add to a baking tray and season with some olive oil, salt and pepper
-roast for about 10 minutes at 200c
-then add this to a blender with some water and blend until smooth

-in a saucepan, add the chopped brown onion and fry for a few minutes
-add your washed rice in and fry for another few minutes
-then add the blended mix in and top up with any additional water needed
-boil for about 10-12 mins and then lower the heat and cover with a lid for another 5 mins

-for the aubergine, chop it in half and then make grid lines
-in a small bowl, add the spices mentioned above along with some olive oil & salt/pepper
-then brush this seasoning onto the aubergine, and make sure to get it into the crevasses
-roast in the oven at 180 for about 25 mins

Serve with some fresh parsley and enjoy!!!
