Roasted Cauliflower and Refried Beans wrap 🌯
Ok I know its not a looker but honestly trust me on this – it is soooo gooooddd🤤
here are the
📌Can of Black beans
📌1 red onion
📌spices: smoked paprika, cumin, parsley, garlic/onion powder, veggie stock, some honey
-To make the Cauliflower, just chop them up into small bite sized pieces and pop them into a baking tray.
-Add some olive oil and mix in your spices.
-Roast them for a total of 20 minutes, flipping them at the halfway point.
-when you take them out of the oven, drizzle a bit of honey over them.
-For the refried beans, I just used a can of precooked black beans. Make sure to drain and wash the beans before cooking.
-Sauté some chopped red onion before adding the beans to the pan.
-Heat them up with a bit of water and once it is hot, you can mash them up with a potato masher.
-add some water, half a vegetable stock and all your seasoning
-for the avocado sauce, add a mashed avocado and a good 2-3 tablespoons of greek yoghurt.
-the juice of a lemon and season with salt and pepper to taste.
So easy and so delicious as it adds some acidity to the hearty beans.
Chuck it all together into a wrap and yes, add some grated cheese to it (because why not)
