Roasted Carrot & Leek Soup 🥕
All you need to do is roughly chop up:
2 peeled courgettes
~5 medium carrots
4 whole garlic cloves
Season these with some olive oil and whatever seasonings you like – half a teaspoon of tumeric and some paprika go very well with the carrots.
Roast for about 20 minutes, turning at the midway point.
In a saucepan, heat up some water with a vegetable stock. Add in the roasted veggies and blend – add in any more water to reach your preferred consistency
I like to serve this with some parmesan cheese and parsley and of course – some homemade cheesy garlic bread🧀
