Prawn & Spinach Tagliatelle🍤🍝
Simple but boy does it hit the spot…
Start off by finely chopping a red onion and frying until golden. Add in 3-4 cloves of minced garlic and fry for another couple of minutes. Add in some tomato puree and mix in.
For the sauce i like to blend up about 2-3 fresh tomatoes with a can of chopped tomatoes. Add in the seasoning (parsley, oregano, onion powder,salt, pepper) and blend for a couple minutes.
Add this into the fried onions/garlic and simmer until the sauce thickens.
In the meantime, chop a courgette into small chunks and add them into the sauce.
This is a good point to get your pasta boiling – this way the sauce has a bit more time to thicken.
When youre about 5 minutes from serving, add in the precooked and preseasoned prawns and spinach. If you have some fresh parsley, add that in too.
Serve up with some chunky parmesan cheese🧀
