Prawn & Chorizo Linguine 🍝
This is a definite favourite, not only because of how flavoursome it is, but its so quick!
Firstly make sure you season your prawns with some garlic powder, paprika and whatever else you like. Try to do this first or even a few hours before cooking.
Finely chop up some red onion and add to a saucepan with hot oil. Fry until golden and then add 4 cloves of garlic (yes 4, maybe even more. This is very very important). Fry this for only a couple of minutes and then add in the chorizo ( cut up into small chuks). Fry until the chorizo has let out a lot of smell and the pan is looking red.
Add a few handfuls of halved cherry tomatoes and fry until they have softened.
Next, add a few teaspoons of unsalted butter. Season with lots of paprika, fresh parsley and salt/pepper.
Add a few tablespoons of the pasta water and mix.
Finally, add in the precooked prawns and heat them up.
Mix in the cooked linguine and adjust any seasonings (probably need to add a bit more butter and paprika)
