Mac & Cheese but make it healthy🧀🧀

You could never tell how many veggies are hidden in this sauce😍😍

Ingredients:
📌2 small sweet potatoes
📌2 small regular potatoes
📌3 handfuls of cauliflower
📌2 tbsp butter
📌all purpose flour
📌milk of your choice
📌cheese of your choice (I used cheddar and parmesan)
📌1 tsp dijon mustard
📌garlic/onion/paprika powder, salt/pepper
📌breadcrumbs

Method

-start off by peeling and chopping your potatoes
-add them and your cauliflower to a pan with boiling water
-boil this for about 15 mins until very soft

-in a separate saucepan, add your butter and melt fully
-add in a bit of flour at a time, mixing through until it forms a paste
-then add in your milk, a bit at a time and mixing through until you get your preferred consistency
– then add all your cheese and seasonings and dijon mustard

-once the veg has finished, drain it and add it to the cheese sauce
-use a hand blender to blend it all until smooth
-you may need to add a bit more milk to get it to a silky consistency

-boil your macaroni, drain and then add to a large baking dish
– pour in your sauce and mix well

-in a small mixing bowl, add your breadcrumbs, some parmesan cheese, garlic powder, onion powder and parsley
-mix this well

-top your macaroni with a last layer of cheese and the breadcrumb mix
-bake in the oven at 200 degrees for about 25 mins

Serve up with some broccoli for even more veg!
