Loaded Jacket Sweet Potato 🥑

I love this one cause you can basically chuck any mixture of grain/legume combo and top with something fresh like avocado/tomato – so tasty

Put a whole sweet potato in the oven for about 45-60 minutes (depending on the size), making sure to pop some holes in to let out some steam.

For the mixture, add in cooked quinoa/rice/couscous (added flavour if this is cooked in stock), cooked black beans/lentils/ any other bean and sweetcorn. Season with paprika, onion/garlic powder and salt/pepper.

Once the sweet potato is cooked through, scoop out the middle and keep the skin in tact. Mix the sweet potato in with the rest of the mixture.

For the topping i just chopped up an avocado and some chunks of goats cheese (aka the best cheese)
