Lentil and Courgette Curry with Dried Raisins 🍲
Ok this one isn’t a looker but honestly it is sooo tasty!!
Loosely ed pickuplimes recipe but had to make a few adjustment as I was missing some ingredients.
To a large saucepan, add a finely chopped medium onion and fry for a few minutes. Then add 3 minced garlic cloves, 2 tsps of ground cumin, 1 tsp of ground cinnamon and 1tsp of dried parsley. Fry this for a good couple of minutes until you can smell the spices.
Then add a can of chopped tomatoes, a chopped red pepper, finely chopped raisins, 1 cubed courgette and a can of cooked brown lentils.
Add in a cup of vegetable stock, a tsp of salt, 1tsp of brown sugar and some pepper.
The key to this one is to let it simmer for a looong time. I left mine for 1hr and 30 minutes – trust me its worth it.
I made some white rice to go along with it and ta-da!
