Homemade Beetroot Falafel Wraps๐ŸŒฏ

For the falafel mix:
๐Ÿ“Œ1 can of drained chickpeas
๐Ÿ“Œ1 medium beetroot
๐Ÿ“Œ4 tbsps plain flour
๐Ÿ“Œ1/2 tsp baking powder
๐Ÿ“Œ2 tsp cumin powder
๐Ÿ“Œ2tbsps lemon juice
๐Ÿ“Œ1/2 red onion
๐Ÿ“Œ3 garlic cloves
๐Ÿ“Œspices: smoked paprika, onion/garlic powder, parsley
๐Ÿ“Œsesame seeds to coat
๐Ÿ“Œoil spray

Yoghurt sauce:
๐Ÿ“Œ3 heaped tbsps greek yoghurt
๐Ÿ“Œ2 tsps garlic powder
๐Ÿ“Œ1tsp smoked paprika
๐Ÿ“Œjuice of half a lemon
๐Ÿ“Œdash of olive oil
๐Ÿ“Œsalt/pepper to taste

To serve:
๐Ÿ“Œhandful of spinach
๐Ÿ“Œcheddar cheese
๐Ÿ“Œ1 avocado
๐Ÿ“Œcherry tomatoes

-to a food processor, add your drained chickpeas
-pulse a few times to start blending
-grate your beetroot and add that into the food processor
-finely chop and fry off the red onion and garlic in some oil and then add to the food processor too
-add in all the other falafel ingredients aside from sesame seeds and oil spray
-pulse only a few times as you dont want it to go mushy, just processed

-make them into small flat round shapes and coat with sesame seeds
-spray some oil on either side
-bake for 30 mins flipping at 15 mins

Serve as pictured and then fry them off for a few minutes for extra yumminessss
