Fish Thai Green Curry & Homemade Naan 🥬

Don’t judge me for having Thai curry with a naan… it was delicious and I do not regret it🤤🤤

Ingredients for the curry:
📌 2 tsps Thai green curry paste
📌1 can of coconut milk
📌1 vegetable stock
📌mushrooms/cauliflour/courgette (sub for whatever veg you like)
📌basa fish fillets
📌spinach
📌parsley/basil
📌brown sugar

Method:
-fry off the curry paste for a few minutes to let out the flavours
-add in the vegetable stock and cocunut milk and simmer for 10 mins
-add your veg
-to a blender, add a handful of spinach, basil, parsley and a couple tablespoons of the sauce.
-blend until smooth and then return to the pan
-season with some onion/garlic powder, paprika, 1tsp of brown sugar, salt and pepper
-let this simmer for about 30 mins
-add in your fish for about 10-15 minutes depending on size

Ingredients for the naan:

📌1 and 3/4 cups self raising flour
📌1 tsp salt
📌1 cup greek yoghurt
📌garlic/butter to coat

Method:
-sieve your flour and salt into a large mixing bowl
-add the greek yoghurt and knead until the dough forms
-cut the dough up into 8 pieces
-add some flour to your surface to make sure it doesnt stick and roll the dough out
-make sure they are quite thin so it cooks through
-to a non stick pan, add your naan and brush on some grated garlic and butter to both sides
-fry the naan for a few minutes on each side
