Feta and Cauliflower Cous Cous 🥗
To cook the cous cous, just place the dry grain on a large platter. Boil some water and mix a chicken/veg stock in. Pour this water over the cous cous and mix in. Cover this up and let it sit for 10-15 minutes. Add a pinch of salt/ pepper and fluff it out with a fork.
The cauliflower is roasted in the oven with paprika, cumin, garlic powder, salt/pepper.
Roughly chop up some spinach and cube some feta into small pieces.
Mix it all in with the cous cous and add the juice of half a lemon and serve
