Curried Parsnip & Lentil Soup 🍲

Comforting recipe by jamieoliver but tweaked a bit

INGREDIENTS (makes 3 servings)
πŸ“Œ4-5 parsnips
πŸ“Œ2-3 carrots
πŸ“Œ1 can green lentils (can swap for any lentils)
πŸ“Œ2 veg stock cubes
πŸ“Œ1 brown onion
πŸ“Œ4 cloves garlic
πŸ“Œbunch fresh parsley
πŸ“Œspices: tumeric, cumin, coriander, paprika, ginger onion powder

-start off by chopping up 3-4 parsnips and 2 carrots into bitesized pieces – dont worry about peeling these, keep the extra fibre!
-then chop up the onion and add them to a hot saucepan
-fry off the onion for a minute before adding the parsnips and carrots
-fry this mixture for about 15 minutes on medium heat – you want the parsnips to caramelize and brown up

-whilst that is cooking away, speed peel the rest of your parsnips and carrots
-par boil them for 30 seconds and then pat dry
-spread them out onto a baking dish and then sprinkle on some olive oil and salt/pepper
-add to a preheated oven for 15 mins until crispy

-back onto the soup, add your veg stock and water to the mix
-then drain and rinse your lentils and add them too
-i like my soup a little thicker so I blended up some of it but this is optional

-adjust the seasonings with some more salt/pepper

-serve up with the parsnip/carrot skins
