Creamy Red Lentil Curry 🥘
My first time properly free-styling with curry and it turned out pretty good!
Finely chop a large brown onion and fry on low-medium heat until soft. Then add a thumb of chopped ginger and about 3-4 garlic cloves. Add in 2 tsps of cumin powder, 1 tsp of tumeric powder and 1 tsp of (mild) chilli powder and let the spices fry up for a few minutes before adding a tbsp of tomato puree.
To a blender, add a can of chopped tomatoes, a fresh tomato and half of your onion/spices mix. Blend this until smooth and return to the pan. Then add in a can of cocunut milk and a vegetable stock cube.
Chop up 1 red pepper and 1 courgette into small pieces and add this to the mixture. Then, rinse your red lentils before adding them in.
Simmer this on low heat for about 45 minutes and then add in some fresh parsley and the juice of half a lemon.
Serve it up with some garlic rice andd
