Chicken with Mango and Avocado Salsa🥑🥭
To make the chicken, just season some chicken thighs (can make it with chicken breast but it wont be quite as tasty) with paprika, garlic powder and whatever else your heart desires. If possible, season the chicken a few hours before cooking – trust me, its worth it. Fry the chicken in a saucepan until cooked through.
To make the salsa, simply cut up your mango into small pieces, do the same to an avocado (or 2, depending on the size of the mango) and finally half some cherry tomatoes. Squeeze a half a lemon into the mix, and add some olive oil, salt and pepper.
I like to serve this either with rice our cous cous – but the tip is to cook either of these with a chicken stock cube to make it extra tasty.
