Chicken & Veg Traybake 🥕
The easiest dinner and its packed with flavour!
Preseason your chicken thighs with:
Juice of a lemon
1tbsp of honey
Then, cut up your potatoes into large ish chunks – I left the peel on cause convenience & fibre 🙌🏽 (dw i washed them).
Then peel carrots & parsnips and whatever other veg you like. I also added in a red onion for some more flavour.
Pop all of this into your baking tray, season the veg with a bit of salt/pepper and whatever herbs you like.
Add the chicken thighs on top and then add a bit of chicken stock – this will make sure to keep your chicken moist (yes i said it)
Pop in the oven for about 55 mins, checking halfway through and basting the chickens a bit.
Squeeze over the juice of a lemon after plating for some more flavour.
