Chicken Satay Noodles 🍜
If you like peanuts this is the one for you
Cut up your chicken breasts into diagonal slices and season with a tablespoon of peanut butter and some satay sauce, parsley and salt/pepper. Let this sit for a few hours if possible.
Start off by frying the chicken on high heat so you get a good crisp. As the pieces are quite small, they should cook through but dont worry if it’s not fully cooked yet as you will add it back in later. Once the chicken is a little crispy, remove it from the heat and place into a bowl.
Finely slice a red onion and fry for a few minutes before adding 3 garlic cloves. Then add you carrots and let this cook for at least 5 minutes so they soften. You may need to add a splash of water so it doesnt stick to the pan.
Then add in your sliced mushrooms and cook for another few minutes until they reduce. Add in some more satay sauce and some soy sauce.
Add your chicken back in and mix well. In the meantime cook your noodles. Drain and rinse them before mixing in.
Adjust sauce and seasoning and add some fresh parsley andddd
