Butternut Squash & Mushroom Orzo 🍲

INGREDIENTS:
πŸ“Œ1 medium butternut squash
πŸ“Œ250g mushrooms
πŸ“Œ1 brown onion
πŸ“Œ3 cloves garlic
πŸ“Œ500g orzo
πŸ“Œ1 veg stock
πŸ“Œ3tsp mascarpone cheese (optional)
πŸ“Œparmesan cheese
πŸ“Œ3 handfuls of spinach
πŸ“Œfresh parsley
πŸ“Œolive oil
πŸ“Œspices: paprika, onion/garlic powder, tumeric, cumin

METHOD:
-start out by peeling and deseeding your butternut squash
-cut them up into small bitesized pieces and add separate out into 2 baking trays
-to one of the baking trays, add your chopped brown onion
-season with olive oil and seasonings
-bake for about 25 mins, flipping halfway

– in the meantime, chop up your mushrooms and fry them off for about 2-5 minutes so they develop their texture
-season with salt/pepper and add the minced garlic
-remove from the heat and onto a plate

-remove the baking dish with the onions and place into a food processor.
-add some water to thin up the sauce
-add your orzo to a large saucepan and mix through your butternut squash mix, adding the veg stock and more water as needed
-let this simmer for about 10 mins, constantly mixing through so the mixture doesnt stick

-then add in your mascarpone cheese, mushrooms and grated parmesan
-simmer for another 5 minutes

-finally, roughly chop your spinach and fresh parsley and fold these into the mix
-serve up with the remaining roasted butternut squash and some more parmesan
