Butternut Squash Gnocchi with a Brown butter and Sage Sauce 🧀
Last butternut squash post I promise…. I’ve never made gnocchi before or even any kind of pasta, but always wanted to try it. Let me tell you it is not worth the effort! (Unless youre really bored…) But it did taste pretty good for a first attempt!
Cut your butternut squash in half vertically and place in the oven for about 1.5 hours depending on the size. Make sure you can stick a fork in it and if it’s soft, its ready to come out. Peel the skin off and place into a sauce pan. Blend it up and cook on medium heat to remove some of the moisture.
Add this puree to a big mixing bowl and then a few cups of grated parmesan, an egg, salt/pepper and dried thyme. Mix in a cup of plain flour and keep adding until you get a dough consistency that you can mould.
Sprinkle your work surface withe some more flour and then add in your mixture. Roll out into long pieces and then cut into similar shapes.
Now, boil some water and add salt. Add in your gnocchi and boil until they rise up.
In a saucepan, melt some butter and then add your sage leaves to it. Add the gnocchi and sprinkle some more parmesan cheese and some garlic powder.
Plate it up and as always, add more parmesan🧀🧀🧀🧀
