Apple Sausage Linguine with Tomato Sauce🍝
Talk about comfort food….
To make the tomato sauce, start by finely chopping one large brown onion. Fry on medium-low heat for about 10-15 minutes until translucent and then add about 3-4 cloves of garlic. Then add about half of this to a blender, together with 3 fresh tomatoes and 2 cans of chopped tomatoes. Add some salt, basil, parsley and oregano and blend to desired consistency. I like it a little chunky but up to you!
Then to the rest of the onions/garlic, add about a tbsp of tomato puree and mix for a few minutes. Then add the mix from the blender to the saucepan. Add a tablespoon of balsamic vinegar and a handful of fresh parsley (and basil if you have it).
Now the key with the sauce is to be patient so ideally you will let it simmer for over an hour – the longer the better. When the sauce has reduced to about half, its about ready. Add some freshly ground pepper and voila!!
The sausages just went in the oven for about 25 minutes and were deliiicious.
Serve with your preferred pasta and of course, cheeseee🧀🧀🧀🧀
