Υλικά: 16 ουγκιές baby bella μανιτάρια 6-8 λιαστές ντομάτες σε λάδι, συν ένα ψιλό ντοματέλαιο 2 μεγάλες χούφτες φρέσκο baby σπανάκι 2 φλιτζάνια λευκά φασόλια, ψημένα και ξεπλυμένα 1 μέτριο γλυκό κρεμμύδι 3 σκελίδες σκόρδο 2 κουταλιές της σούπας βούτυρο vegan 2 κουταλιές της σούπας αλεύρι για όλες τις χρήσεις 1/2 κουταλιά της σούπας ιταλικά μυρωδικά 3 φλιτζάνια πολύ κρεμώδες γάλα βρώμης 1 κουταλιά της σούπας ξύδι από λευκό κρασί Αλάτι και μαύρο πιπέρι για γεύση Προαιρετικά: φρέσκα μυρωδικά (όπως μαϊντανός, βασιλικός, ρίγανη) Μέθοδος: Καθαρίστε τα μανιτάρια και κόψτε τα μισό ή τέταρτο ανάλογα με το μέγεθός τους. Ψιλοκόβουμε το κρεμμύδι, το σκόρδο σε λεπτές φέτες και τις λιαστές ντομάτες. Λιώστε το vegan βούτυρο σε ένα βαθύ τηγάνι ή ολλανδικό φούρνο και σοτάρετε τα κρεμμύδια για 5 λεπτά σε χαμηλή προς μέτρια φωτιά, στη συνέχεια προσθέστε το σκόρδο, τις ντομάτες και τα μανιτάρια. Σοτάρουμε για άλλα 5-8 λεπτά, προσθέτουμε το αλεύρι για όλες τις χρήσεις και συνεχίζουμε το ανακάτεμα για άλλα 1-2 λεπτά. Προσθέστε γάλα βρώμης, λευκά φασόλια, ξύδι και βότανα και αφήστε τα όλα να βράσουν. Σιγοβράζουμε για 10 λεπτά, μετά προσθέτουμε το σπανάκι, τα φρέσκα μυρωδικά αν το χρησιμοποιήσουμε και αλατοπιπερώνουμε κατά βούληση. Αν χρειαστεί προσθέστε περισσότερο υγρό για να αραιώσει η σάλτσα (κυρίως αν θέλετε να τη χρησιμοποιήσετε ως σούπα). Περιχύστε με λίγο λάδι λιαστής ντομάτας και απολαύστε!
