Τραγανές πατάτες & μανιτάρια με αβοκάντο by miss_gruenkern Συνταγή 1½ κιλό κίτρινες ή κόκκινες πατάτες baby ελαιόλαδο (τόσο για να καλύψετε) μεγάλη πρέζα μαύρο πιπέρι τριμμένο ¼ κουταλάκι του γλυκού αλάτι ½ κουταλάκι του γλυκού αποξηραμένη ρίγανη ½ κουταλάκι του γλυκού χυμό λεμονιού 1 κουταλάκι του γλυκού θυμάρι ξερό ⠀ Οδηγίες⠀ Προθερμάνετε το φούρνο στους 425°F. Πλένουμε τις πατάτες και τις κόβουμε στη μέση. Τοποθετήστε σε ένα μπολ, ρίξτε αλάτι, θυμάρι, σκόρδο, χυμό λεμονιού, ρίγανη και πιπέρι. Ψήνουμε για 25 λεπτά σε ταψί στρωμένο με λαδόκολλα. Βγάζουμε από το φούρνο, αναδιατάσσουμε τις πατάτες και τις ψήνουμε για άλλα 5-10 λεπτά, μέχρι να ροδίσουν και να γίνουν τραγανές. ⠀ Ψητά μανιτάρια 2 λίβρες (900 γρ.) μανιτάρια κουμπιού ή κρεμίνι, πλυμένα, κομμένα και κομμένα στα τέσσερα 1/4 φλιτζάνι (60 ml) έξτρα παρθένο ελαιόλαδο αλάτι Kosher και φρεσκοτριμμένο μαύρο πιπέρι 8 έως 12 κλωνάρια θυμάρι ή δεντρολίβανο 2 κουταλιές της σούπας μαϊντανός ψιλοκομμένος σχοινόπρασο, εστραγκόν ή άλλα φρέσκα βότανα ⠀ Οδηγίες 1. Ρυθμίστε τη σχάρα του φούρνου στην κεντρική θέση και προθερμάνετε το φούρνο στους 375°F. Ρίχνουμε τα μανιτάρια με ελαιόλαδο και αλατοπιπερώνουμε. Μεταφέρετε σε ένα φύλλο ψησίματος με επένδυση με αλουμινόχαρτο και απλώστε σε μια ομοιόμορφη στρώση. Απλώνουμε πάνω από τα μανιτάρια κλωναράκια θυμάρι ή δεντρολίβανο. Μεταφέρετε στο φούρνο και ψήνετε μέχρι να βγάλουν υγρά τα μανιτάρια, περίπου 15 λεπτά. 2. Επιστρέψτε τα μανιτάρια στο φούρνο και συνεχίστε το ψήσιμο μέχρι να ροδίσουν αλλά να είναι ακόμα τρυφερά, περίπου 30 λεπτά περισσότερο. Πετάξτε το θυμάρι ή το δεντρολίβανο.
